Experience the Delights of Dussehra: A Culinary Journey Awaits!

Aloo Puri, a quintessential North Indian delicacy, combines crispy deep-fried puris (unleavened bread) with a flavorful potato curry. To create this delightful dish, you’ll need:

Ingredients for Aloo Puri:

  • 2 cups of whole wheat flour
  • Water for kneading
  • Oil for deep frying

For the Aloo Curry:

  • 4 medium-sized potatoes, boiled and diced
  • 1 finely chopped onion
  • 2 finely chopped tomatoes
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of red chilli powder
  • 1 teaspoon of garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions for Aloo Puri:

  1. Start by kneading the whole wheat flour into a firm dough using water.
  2. Divide the dough into small portions and shape them into balls. Roll each ball into a thin circle to create the puris.
  3. Heat oil in a deep pan and deep fry the puris until they puff up and turn golden brown.
  4. In a separate pan, heat some oil and add cumin seeds. Once they sizzle, add the chopped onions and sauté until golden.
  5. Add the chopped tomatoes, turmeric, red chilli powder, and salt. Cook until the tomatoes soften and the oil separates.
  6. Mix in the boiled potatoes and garam masala, allowing it to simmer briefly.
  7. Garnish with fresh coriander leaves and serve with hot puris.

Suji Ka Halwa (Semolina Dessert)

Suji Ka Halwa, a simple yet delightful dessert, is made with semolina and ghee. Here are the ingredients you need:

Ingredients for Suji Ka Halwa:

  • 1 cup of semolina (suji)
  • 1/2 cup of ghee
  • 1 cup of sugar
  • 2 cups of water
  • A pinch of cardamom powder
  • Chopped nuts for garnish

Instructions for Suji Ka Halwa:

  1. Start by heating ghee in a pan and adding semolina. Roast it over low heat until it turns golden brown and releases a delightful aroma.
  2. In a separate pot, boil water and dissolve sugar and cardamom powder, stirring until the sugar dissolves.
  3. Gradually add the sugar syrup to the roasted semolina, stirring continuously to avoid lumps.
  4. Cook until the mixture thickens and leaves the sides of the pan.
  5. Garnish with chopped nuts and serve while still warm.

Kale Chane (Black Chickpea)

Kale Chane, or Black Chickpea, is a protein-rich delicacy perfect for festive occasions. Here’s how to make it:

Ingredients for Kale Chane:

  • 1 cup of black chickpeas, soaked overnight
  • 1 finely chopped onion
  • 1 finely chopped tomato
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of coriander powder
  • 1/2 teaspoon of turmeric powder
  • 1/2 teaspoon of red chilli powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions for Kale Chane:

  1. Begin by cooking the soaked black chickpeas in salted water until they become tender.
  2. In a separate pan, heat some oil, add cumin seeds, and sauté the onions until they turn golden.
  3. Add the chopped tomatoes and cook until they soften.
  4. Mix in coriander powder, turmeric, red chilli powder, and salt. Cook until the oil separates from the mixture.
  5. Combine the spiced tomato-onion mixture with the cooked chickpeas.
  6. Simmer briefly, garnish with fresh coriander leaves, and serve hot.
